Rhubarb Dream Bars

Delicious rhubarb bars with a sweet crust and a tangy filling.

Ingredients
  

For the Crust
  • 1 cup All-purpose flour Just regular flour; I have not tried to make these gluten-free.
  • ¼ cup Sugar Regular granulated sugar works well here.
  • ½ cup Butter This needs to be at room temperature. I like to use salted butter for the crust.
For the Filling
  • 2 large Eggs This is the size I always have on hand.
  • 1 cup Sugar I use white sugar and prefer it over brown sugar for this recipe.
  • ¼ cup All-purpose flour This works as a thickener for the filling.
  • ¼ teaspoon Salt It brings out the rhubarb flavor.
  • 2 cups Rhubarb I have used both fresh and frozen rhubarb for this recipe.

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crust ingredients until combined. Press the mixture into the bottom of a greased baking dish.
  3. Bake the crust for 15 minutes until lightly golden.
  4. While the crust is baking, prepare the filling by whisking together eggs, sugar, flour, salt, and rhubarb in a separate bowl.
  5. Pour the filling over the baked crust and return to the oven. Bake for an additional 15 minutes until set.
  6. Allow to cool before cutting into bars.

Notes

These bars can be served chilled or at room temperature. They pair well with whipped cream.
