Ingredients
  

For the Zucchini Stack
  • 2 medium zucchinis, sliced into ¼-inch rounds
  • 8 ounces goat cheese, softened
  • 1 cup cherry tomatoes, halved
For the Dressing
  • ¼ cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • to taste Salt and pepper
  • ½ cup grated Parmesan cheese

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Layer the zucchini slices in a baking dish, alternating with layers of goat cheese, cherry tomatoes, and basil.
  3. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper.
  4. Sprinkle grated Parmesan cheese on top.
  5. Bake for 30 minutes until the zucchini is tender and cheese is golden.
