Ingredients
  

For the Burger Mix
  • 1 can black beans or 1 ½ cups cooked black beans
  • 8 ounces mushrooms
  • 1 medium carrot
  • 1 ½ cups broccoli florets
  • ¼ medium onion
  • 2 cloves garlic medium
  • 2 tablespoons olive oil or avocado oil, plus more for cooking
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder try homemade chili powder
  • ¾ teaspoon fine sea salt
  • ¼ teaspoon fresh ground black pepper
For the Binding
  • cup walnuts
  • 2 cups spinach leaves packed
  • ¼ cup fresh parsley or other fresh herbs
  • ½ cup panko or homemade breadcrumbs
  • 2 large eggs or use 2 homemade flax eggs
  • 1 tablespoon tomato paste
  • ¾ cup cooked brown rice

Method
 

  1. In a mixing bowl, mash the black beans with a fork until mostly smooth.
  2. Add the chopped mushrooms, grated carrot, broccoli florets, onion, garlic, olive oil, smoked paprika, chili powder, salt, and pepper. Mix until combined.
  3. In another bowl, combine the walnuts, spinach, parsley, panko, eggs, tomato paste, and brown rice. Stir to combine.
  4. Mix the two mixtures together until fully combined.
  5. Form the mixture into patties and cook in a skillet with oil over medium heat until golden brown on both sides.

Notes

These veggie burgers can be frozen for later use. Just place cooked patties in an airtight container.
