Ingredients
  

Dressing
  • ½ cup olive oil
  • ¼ cup mayonnaise
  • ¼ cup shaved parmesan cheese
  • 2 tablespoon lemon juice
  • 1 ½ teaspoon dijon mustard
  • 1 clove garlic
  • Salt and pepper to taste
Salad
  • 5 cups chopped romaine or mixed greens
  • 2 cups croutons
  • ½ cup shaved parmesan cheese

Method
 

  1. In a mixing bowl, whisk together the olive oil, mayonnaise, shaved parmesan, lemon juice, dijon mustard, minced garlic, salt, and pepper until smooth.
  2. In a large bowl, combine the chopped romaine or mixed greens, croutons, and additional shaved parmesan. Drizzle the dressing over the salad and toss to coat.

Feel free to add other ingredients like cherry tomatoes or avocado for extra flavor.
