Ingredients
  

For the Base
  • 2.5 lb sweet potato peeled and cut into 1-inch cubes
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
For the Dressing
  • ½ red onion finely diced for even distribution
  • 2 stalks celery finely diced
  • cup sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 tablespoon fresh lime juice
  • 1 tablespoon seafood seasoning Old Bay
  • 1.25 cups mayonnaise
  • 1.5 teaspoons dried parsley
  • 1.5 teaspoons dried chives

Method
 

  1. Boil the sweet potato cubes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a mixing bowl, combine the dressing ingredients: red onion, celery, sweet pickle relish, yellow mustard, lime juice, seafood seasoning, mayonnaise, dried parsley, and dried chives. Mix well.
  3. Add the cooled sweet potatoes to the dressing mixture and gently fold until well coated.
  4. Chill in the refrigerator for at least 1 hour before serving.

Notes

This salad can be made a day ahead for better flavor. Adjust seasoning to taste.
