- Prepare the strong coffee and let it cool.
- In a mixing bowl, beat the egg yolks with the caster sugar until pale and creamy. Add the mascarpone cheese and mix until smooth.
- In another bowl, whisk the egg whites until stiff peaks form. Gently fold them into the mascarpone mixture.
- Dip each ladyfinger quickly into the coffee, then layer them in the serving dish.
- Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder and add chocolate shavings if desired.
Notes
For a richer flavor, consider adding a splash of coffee liqueur to the coffee dip.
