Ingredients
  

For the Baked Potatoes
  • 4 large russet potatoes
  • Neutral oil, for coating
  • Salt, to taste
  • Black pepper, to taste (for inside)
  • Butter, for serving
For the Burger Sauce
  • cup mayonnaise
  • 4 tablespoons pickle relish, drained
  • 3 tablespoons ketchup
  • 1 teaspoon sugar
For the Caramelized Onions
  • 1 large onion, finely diced
  • ½ tablespoon neutral oil
  • ¼ teaspoon salt
  • 4 tablespoons water, or as needed
For the Ground Beef
  • 1 tablespoon unsalted butter or avocado oil
  • 1 pound 90/10 ground beef
  • ¾ teaspoon salt, add to taste
  • ¼ teaspoon black pepper
  • ½ tablespoon Worcestershire sauce
  • ¼ cup beef broth
  • 1 teaspoon yellow mustard
  • 4 slices American cheese
For the Toppings
  • Dill pickle slices
  • Pepperoncinis, chopped
  • Chopped parsley

Method
 

  1. Preheat your oven to 425°F (220°C). Scrub the potatoes and pierce them with a fork. Coat them with neutral oil, then sprinkle with salt.
  2. Bake the potatoes for about 60 minutes until they are tender.
  3. While the potatoes bake, prepare the burger sauce by mixing mayonnaise, pickle relish, ketchup, and sugar in a bowl.
  4. For caramelized onions, heat neutral oil in a skillet over medium heat. Add the onions and salt, cooking until soft. Add water as needed to prevent sticking.
  5. In another skillet, melt butter or heat avocado oil over medium-high heat. Add ground beef, salt, black pepper, Worcestershire sauce, and beef broth. Cook until browned. Stir in yellow mustard and cheese until melted.
  6. Slice the baked potatoes open and fluff the insides with a fork. Top with the beef mixture, caramelized onions, burger sauce, and your choice of toppings.
