Ingredients
  

For the Filling
  • ½ cup diced carrot
  • ½ cup diced red bell pepper
  • ½ yellow onion diced
  • 1 pound extra lean ground chicken or turkey
  • 1 teaspoon coconut oil
  • 1 tablespoon soy sauce use gluten free variety if you're gluten free
  • ½ cup peanut sauce plus more for drizzling
  • 1 tablespoon lime juice
For Serving
  • Bibb or butter lettuce to make the cups
  • Green onions for topping
  • Sesame Seeds for topping

Method
 

  1. Heat coconut oil in a skillet over medium heat. Add diced onion, carrot, and red bell pepper. Sauté until softened.
  2. Add the ground chicken or turkey to the skillet. Cook until browned, then stir in soy sauce, peanut sauce, and lime juice. Cook for an additional 2 minutes.
  3. Remove from heat and spoon the filling into lettuce cups. Top with green onions and sesame seeds.

Notes

You can adjust the amount of peanut sauce based on your preference. Serve with extra lime juice on the side for added flavor.
