- Heat coconut oil in a skillet over medium heat. Add diced onion, carrot, and red bell pepper. Sauté until softened.
- Add the ground chicken or turkey to the skillet. Cook until browned, then stir in soy sauce, peanut sauce, and lime juice. Cook for an additional 2 minutes.
- Remove from heat and spoon the filling into lettuce cups. Top with green onions and sesame seeds.
Notes
You can adjust the amount of peanut sauce based on your preference. Serve with extra lime juice on the side for added flavor.
