Ingredients
  

For the Beef
  • 4 slices beef
For the Potatoes
  • 2 tablespoon canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 ½ tablespoon taco seasoning mix
For the Assembly
  • 8 soft corn tortillas (6 inch)
  • 8 eggs well beaten
  • ½ cup shredded Monterey Jack cheese (2 oz)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat canola oil over medium heat. Add beef and cook until browned.
  3. Add potatoes and taco seasoning mix to the skillet. Cook until potatoes are tender.
  4. In a baking dish, layer the tortillas, beef mixture, and beaten eggs. Top with cheese.
  5. Bake for 20-25 minutes until the eggs are set.

Notes

Serve with salsa or avocado for extra flavor.
