Ingredients
  

For the Jalapeño Sauce
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon pickled jalapeño juice
  • 1 tablespoon minced pickled jalapeños
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon paprika
  • Pinch salt and pepper
For the Quesadillas
  • 2 cups cooked, shredded chicken
  • 2 cups shredded Mexican blend cheese or cheddar cheese
  • 4 large flour tortillas
  • 2 tablespoon butter or oil for cooking

Method
 

  1. In a mixing bowl, combine mayonnaise, sour cream, pickled jalapeño juice, minced jalapeños, garlic powder, onion powder, ground cumin, paprika, salt, and pepper to make the jalapeño sauce.
  2. Heat a skillet over medium heat. Spread some butter or oil on one side of a tortilla. Place the tortilla in the skillet, add shredded chicken and cheese, top with another tortilla, and cook until golden brown. Flip and cook the other side.
  3. Repeat with remaining tortillas and fillings. Serve warm with jalapeño sauce.

Notes

You can customize the filling with your favorite ingredients like peppers or onions.
