- Heat the olive oil in a skillet over medium heat. Add the sweet potato cubes and cook for about 10 minutes, stirring occasionally.
- Add the smoked paprika, salt, and pepper to the skillet. Cook for another 5 minutes, then add the ground beef (or alternative) and taco seasoning. Cook until the protein is fully cooked, about 10 minutes.
- Serve the sweet potato mixture in bowls and top with pico de gallo, guacamole, and sour cream.
