Ingredients
  

For the Sweet Potato
  • 1 large sweet potato, peeled and cubed into ½-inch pieces
For the Seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • to taste salt and freshly ground black pepper
For the Protein
  • ½ pound ground beef (or ground turkey, or cooked lentils for a vegetarian option)
  • 1 tablespoon taco seasoning store-bought or homemade
For the Toppings
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tablespoons sour cream (or dairy-free alternative like cashew cream or plain coconut yogurt)

Method
 

  1. Heat the olive oil in a skillet over medium heat. Add the sweet potato cubes and cook for about 10 minutes, stirring occasionally.
  2. Add the smoked paprika, salt, and pepper to the skillet. Cook for another 5 minutes, then add the ground beef (or alternative) and taco seasoning. Cook until the protein is fully cooked, about 10 minutes.
  3. Serve the sweet potato mixture in bowls and top with pico de gallo, guacamole, and sour cream.
