Ingredients
  

For the Salad
  • 2 cups grilled corn kernels about 3 ears of corn
  • 1 large English cucumber diced
  • ½ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • to taste Salt and black pepper
Optional Topping
  • cup crumbled feta or cotija cheese optional

Method
 

  1. In a large bowl, combine the grilled corn, diced cucumber, chopped red onion, and cilantro.
  2. In a separate bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss to combine. Add crumbled cheese if using.

Notes

This salad is best served chilled. You can adjust the spices to your taste.
