Ingredients
  

For the Crust
  • 3 cups all-purpose flour spooned & leveled
  • ½ cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon optional
  • ¼ teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • ¼ cup milk
  • cup old-fashioned whole rolled oats *
Strawberry Rhubarb Filling
  • 2 and ½ cups chopped strawberries about 380g
  • 2 and ½ cups sliced rhubarb (½ inch pieces)
  • ½ cup granulated sugar
  • 1 Tablespoon cornstarch
  • 1 teaspoon orange zest

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt. Cut in the cold butter until crumbly. Stir in the egg, vanilla, and milk. Reserve some of this mixture for topping.
  3. Press the remaining mixture into the bottom of the greased baking dish.
  4. In another bowl, mix strawberries, rhubarb, granulated sugar, cornstarch, and orange zest. Spread this filling over the crust.
  5. Sprinkle the reserved crumb mixture over the filling.
  6. Bake for 40-45 minutes or until the topping is golden brown.
  7. Allow to cool before cutting into bars.

Notes

Serve chilled or at room temperature. You can store these bars in an airtight container.
