Ingredients
  

For the Salad
  • 2 lbs red potatoes cubed
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon Dijon mustard
  • 1 small red onion chopped
  • 5 strips cooked bacon crumbled
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped parsley
  • ¼ cup chopped dill pickles
  • Salt and pepper to taste

  • chives or green onions optional

Equipment

Method
 

  1. In a large bowl, combine the cubed red potatoes, mayonnaise, sour cream, apple cider vinegar, and Dijon mustard.
  2. Add the chopped red onion, crumbled bacon, shredded cheddar cheese, chopped parsley, and chopped dill pickles. Mix well.
  3. Season with salt and pepper to taste.
  4. If desired, garnish with chives or green onions before serving.

Notes

This potato salad can be prepared ahead of time and stored in the refrigerator for a few hours before serving.
