- In a large bowl, combine the cubed red potatoes, mayonnaise, sour cream, apple cider vinegar, and Dijon mustard.
- Add the chopped red onion, crumbled bacon, shredded cheddar cheese, chopped parsley, and chopped dill pickles. Mix well.
- Season with salt and pepper to taste.
- If desired, garnish with chives or green onions before serving.
Notes
This potato salad can be prepared ahead of time and stored in the refrigerator for a few hours before serving.
