- In a mixing bowl, combine gochujang, soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and black pepper. Mix well.
- Add chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- Heat oil in a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
- While the chicken cooks, prepare the slaw by combining cabbage, carrots, mayonnaise, lime juice, and sriracha in a bowl. Mix well.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Assemble the sandwiches by placing sliced chicken on the buns, topping with the crispy slaw, cilantro, and sesame seeds.
