For the Chicken Marinade
  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons gochujang (Korean red chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon black pepper
For the Slaw
  • 1 cup green cabbage, finely shredded
  • 1 cup carrots, julienned
  • ΒΌ cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha (optional for extra heat)
For Serving
  • 4 burger buns preferably brioche
Garnishes
  • Fresh cilantro for garnish
  • Sesame seeds for garnish
  • Oil for cooking (canola or vegetable)

Method
 

  1. In a mixing bowl, combine gochujang, soy sauce, honey, sesame oil, garlic, ginger, rice vinegar, and black pepper. Mix well.
  2. Add chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  3. Heat oil in a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
  4. While the chicken cooks, prepare the slaw by combining cabbage, carrots, mayonnaise, lime juice, and sriracha in a bowl. Mix well.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing.
  6. Assemble the sandwiches by placing sliced chicken on the buns, topping with the crispy slaw, cilantro, and sesame seeds.

Notes

You can adjust the sriracha amount based on your heat preference.
