Ingredients
  

For the Slaw
  • 1 bag (14 oz) cole slaw mix the perfect base for a crunchy texture
  • 2 cups corn fresh or frozen (thawed)
  • 0.25 cup jalapeño minced, seeds removed
  • 0.5 cup cilantro roughly chopped
  • 3 pieces green onions chopped
  • 0.5 cup mayonnaise can substitute with Greek yogurt
  • 2 tablespoons sugar adjust based on your preferences
  • 1 teaspoon garlic powder can substitute with fresh minced garlic
  • to taste salt
  • to taste pepper
  • 2 pieces limes juice of

Method
 

  1. In a large bowl, combine the cole slaw mix, corn, jalapeño, cilantro, and green onions.
  2. In a separate bowl, mix the mayonnaise, lime juice, sugar, garlic powder, salt, and pepper.
  3. Pour the dressing over the slaw mixture and toss until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This slaw is best served cold. You can adjust the spice level by adding more or less jalapeño.
