  • ½ cup soft unsalted butter
  • ½ cup light brown sugar
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 1 ripe mashed banana
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 cup chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, light brown sugar, and granulated sugar until smooth.
  3. Add the egg, mashed banana, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and sea salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 10-12 minutes or until edges are lightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
