Ingredients
  

For the Falafel
  • 1 can chickpeas 14.5 oz / 410 g, drained and rinsed
  • ½ cup chopped parsley 20 g
  • ¼ cup chopped cilantro 10 g
  • 1 tablespoon plain flour
Seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon salt
For the Wrap Fillings
  • Pickles your choice
  • Tomatoes sliced
  • Onion thinly sliced
  • Fresh parsley chopped
For the Garlic Tahini Sauce
  • ½ cup tahini 120 g
  • 2 cloves garlic crushed
  • ½ teaspoon salt
  • 1 tablespoon lemon juice
  • cup water 80 ml
Other Ingredients
  • Arabic-style pita bread or tortilla wraps
  • Fresh greens optional: like lettuce or arugula for extra crunch

Method
 

  1. In a food processor, combine chickpeas, parsley, cilantro, plain flour, cumin, coriander, cinnamon, red pepper flakes, and salt. Pulse until well mixed but not pureed.
  2. Form the mixture into small patties and cook in a skillet over medium heat until golden brown on both sides.
  3. While the falafel cooks, prepare the garlic tahini sauce by mixing tahini, garlic, salt, lemon juice, and water until smooth.
  4. Assemble the wraps with falafel, pickles, tomatoes, onion, fresh parsley, and a drizzle of garlic tahini sauce.

Notes

You can serve these wraps warm or cold. Feel free to customize the fillings based on your preferences.
