For the Chicken
  • 4 pieces boneless skinless chicken breasts or 6 chicken thighs
For the Sauce
  • ½ cup honey
  • cup Dijon mustard
  • 2 tablespoon whole grain mustard optional, for texture
  • 2 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon cornstarch optional, for thickening
  • 2 tablespoon water if thickening sauce
  • Fresh parsley for garnish optional

Method
 

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, lemon juice, paprika, salt, black pepper, and thyme.
  3. Pour the sauce over the chicken in the slow cooker.
  4. Cover and cook on low for 4 hours or until the chicken is cooked through.
  5. If thickening the sauce, combine cornstarch and water in a small bowl, then stir into the sauce before serving.
  6. Garnish with fresh parsley before serving.
