Ingredients
  

For the Toast
  • 2 slices hearty bread (sourdough or whole wheat)
For the Sauce
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional) for heat
  • Salt and pepper to taste
  • 2 large eggs
  • Fresh parsley or cilantro, chopped for garnish
  • Feta cheese optional, for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and bell pepper, and sauté until softened.
  2. Add minced garlic, diced tomatoes, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for 10 minutes until thickened.
  3. Create two wells in the sauce and crack an egg into each. Cover and cook until the eggs are set.
  4. Toast the bread slices and top with the shakshouka mixture. Garnish with parsley or cilantro and feta cheese if desired.

Notes

This dish is great for breakfast or brunch. You can adjust the spices according to your taste.
