  • ΒΌ cup mixed fresh herbs such as sage, basil, thyme, flat-leaf parsley, and mint, coarsely chopped

  • flaky sea salt for sprinkling

Method
 

  1. In a bowl, whisk the eggs with a large pinch of coarse salt until well combined.
  2. Heat the butter in a skillet over medium heat. Once melted, pour in the eggs and cook, stirring gently.
  3. When the eggs are nearly set, add the mixed herbs and cook for another minute.
  4. Serve the scrambled eggs topped with flaky sea salt, alongside toasted baguette and fresh chives.

You can use any combination of fresh herbs you prefer.
