Method
- Cook the rotini pasta according to package instructions. Drain and set aside to cool.
- In a mixing bowl, combine mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, onion powder, and smoked paprika. Mix until smooth.
- In another bowl, flake the cooked salmon and add it with the diced red bell pepper, cherry tomatoes, red onion, dill, and parsley to the dressing. Stir gently to combine.
- Add the cooled pasta to the salmon mixture and toss until well coated. Season with salt and black pepper to taste.
- Chill for at least 30 minutes before serving for best flavor.
Notes
You can add other vegetables or substitute the salmon with grilled chicken if desired.
