Ingredients
  

For the Salmon
  • 1 pound salmon fillets, skin removed
For the Pasta
  • 12 ounces rotini pasta
For the Dressing
  • 1 cup mayonnaise
  • ½ cup plain Greek yogurt
  • ¼ cup fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
For the Vegetables
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • Salt and black pepper to taste

Method
 

  1. Cook the rotini pasta according to package instructions. Drain and set aside to cool.
  2. In a mixing bowl, combine mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, onion powder, and smoked paprika. Mix until smooth.
  3. In another bowl, flake the cooked salmon and add it with the diced red bell pepper, cherry tomatoes, red onion, dill, and parsley to the dressing. Stir gently to combine.
  4. Add the cooled pasta to the salmon mixture and toss until well coated. Season with salt and black pepper to taste.
  5. Chill for at least 30 minutes before serving for best flavor.

Notes

You can add other vegetables or substitute the salmon with grilled chicken if desired.
