Ingredients
  

For the Salad
  • 300 g cooked and peeled beets
  • 150 g feta cheese
  • 1 large cucumber
  • 1 small red onion
For the Dressing
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • to taste salt and pepper
  • optional fresh parsley for garnish

Method
 

  1. Chop the cooked beets, feta cheese, cucumber, and red onion into bite-sized pieces.
  2. In a bowl, combine the beets, feta, cucumber, and onion.
  3. In another bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and mix well.
  5. Garnish with fresh parsley if desired.

Notes

This salad is best served fresh. You can also add nuts for extra crunch.
