Ingredients
  

The Base & Protein
  • 2 large Sweet Potatoes Cubed and roasted until tender and slightly charred.
  • 1 lb Ground Beef Lean ground beef sautéed with taco seasoning.
Base Layer (Optional)
  • 2 cups Cilantro-Lime Rice Or quinoa, or cauliflower rice.
The Fresh Toppings
  • 1 cup Guacamole or Mashed Avocado Seasoned with lime and salt.
  • 1 cup Pico de Gallo Fresh mix of diced tomatoes, red onions, and cilantro.
  • ½ cup Sour Cream or Greek Yogurt For creaminess.
  • ¼ cup Fresh Cilantro Roughly chopped for garnish.
  • 1 wedge Lime Essential for finishing.

Method
 

  1. Preheat the oven to 425°F (220°C). Toss the sweet potatoes in olive oil, season with salt, and roast for about 25 minutes or until tender.
  2. In a skillet, brown the ground beef over medium heat. Add taco seasoning and cook until well combined.
  3. Prepare your base layer by cooking cilantro-lime rice or your choice of grain.
  4. Assemble the taco bowls by layering the base, followed by sweet potatoes, ground beef, and fresh toppings.
