Ingredients
  

For the Chicken
  • 1 kg Chicken drumsticks
  • 2 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme or oregano
For the Roasted Potatoes
  • 500 g Potatoes (cut into chunks)
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
For the Coleslaw
  • 2 cups Green cabbage (shredded)
  • 1 cup Purple cabbage (shredded)
  • 1 cup Carrots (grated)
  • ½ cup Mayonnaise
  • 2 tablespoon Vinegar or lemon juice
  • 1 teaspoon Sugar
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix the chicken drumsticks with olive oil, garlic powder, paprika, salt, black pepper, onion powder, and thyme or oregano. Place on a baking sheet.
  3. In another bowl, toss the potatoes with olive oil, salt, black pepper, paprika, and garlic powder. Spread on the baking sheet with the chicken.
  4. Roast in the oven for 45 minutes or until the chicken is cooked through and the potatoes are golden.
  5. In a separate bowl, combine the green cabbage, purple cabbage, carrots, mayonnaise, vinegar or lemon juice, sugar, salt, and black pepper. Mix well to create coleslaw.
  6. Serve the roasted chicken drumsticks with potatoes and coleslaw.

Notes

You can customize the coleslaw by adding more vegetables or using a different dressing.
