Method
- Preheat your oven to 200°C (400°F).
- In a bowl, mix the chicken drumsticks with olive oil, garlic powder, paprika, salt, black pepper, onion powder, and thyme or oregano. Place on a baking sheet.
- In another bowl, toss the potatoes with olive oil, salt, black pepper, paprika, and garlic powder. Spread on the baking sheet with the chicken.
- Roast in the oven for 45 minutes or until the chicken is cooked through and the potatoes are golden.
- In a separate bowl, combine the green cabbage, purple cabbage, carrots, mayonnaise, vinegar or lemon juice, sugar, salt, and black pepper. Mix well to create coleslaw.
- Serve the roasted chicken drumsticks with potatoes and coleslaw.
Notes
You can customize the coleslaw by adding more vegetables or using a different dressing.
