Ingredients
  

For the Roasted Chicken Drumsticks
  • 4–6 pieces chicken drumsticks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or mixed herbs
  • to taste salt
For the Roasted Potato Wedges
  • 4 medium potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • to taste salt and black pepper
For the Creamy Coleslaw
  • 2 cups shredded green cabbage
  • ½ cup shredded red cabbage
  • ½ cup grated carrots
  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon sugar
  • to taste salt and black pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Toss the chicken drumsticks with olive oil, garlic, paprika, garlic powder, black pepper, thyme, and salt in a bowl. Place on a baking sheet.
  3. In another bowl, mix the potato wedges with olive oil, paprika, garlic powder, salt, and black pepper. Arrange them on the baking sheet with the chicken.
  4. Roast for 40 minutes or until the chicken is cooked through and the potatoes are golden brown.
  5. For the coleslaw, combine the green cabbage, red cabbage, carrots, mayonnaise, vinegar, sugar, salt, and pepper in a bowl. Mix well.
  6. Serve the roasted chicken with potato wedges and coleslaw.

Notes

You can adjust the seasoning to your preference. Feel free to add other vegetables to the coleslaw.
