Method
- Preheat the oven to 400°F (200°C).
- Toss the chicken drumsticks with olive oil, garlic, paprika, garlic powder, black pepper, thyme, and salt in a bowl. Place on a baking sheet.
- In another bowl, mix the potato wedges with olive oil, paprika, garlic powder, salt, and black pepper. Arrange them on the baking sheet with the chicken.
- Roast for 40 minutes or until the chicken is cooked through and the potatoes are golden brown.
- For the coleslaw, combine the green cabbage, red cabbage, carrots, mayonnaise, vinegar, sugar, salt, and pepper in a bowl. Mix well.
- Serve the roasted chicken with potato wedges and coleslaw.
Notes
You can adjust the seasoning to your preference. Feel free to add other vegetables to the coleslaw.
