  • 2 medium beets
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ½ cup feta cheese, crumbled
For the Yogurt Dressing
  • ½ cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the beets and sweet potatoes. Cut them into cubes and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 25-30 minutes or until tender.
  3. While the vegetables are roasting, prepare the yogurt dressing by mixing Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper in a bowl.
  4. Once the beets and sweet potatoes are roasted, let them cool slightly. Toss them with crumbled feta cheese and the yogurt dressing before serving.

Notes

You can add nuts or seeds for extra crunch. This salad is great served warm or cold.
