  • 4 cups fresh or frozen rhubarb, chopped
  • 1 scant cup white sugar
  • 1 package yellow cake mix
  • 1 cup water
  • cup butter, melted
For Preparation

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with cooking spray.
  2. In a mixing bowl, combine rhubarb and sugar. Pour the mixture into the prepared baking dish.
  3. Sprinkle the dry cake mix over the rhubarb mixture evenly.
  4. Pour water and melted butter over the top. Do not stir.
  5. Bake for 45 minutes or until golden brown.

Notes

Allow the cake to cool slightly before serving. It pairs well with ice cream or whipped cream.
