Ingredients
  

For the Crust
  • 1 ½ cups Flour
  • 1 ½ cups Old Fashioned Rolled Oats
  • 1 cup Brown Sugar
  • ½ cup Pecans, Chopped
  • ¾ cup Butter, Melted
For the Cheesecake Filling
  • 1 package (8 oz) Cream Cheese, Softened
  • ½ cup Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla
For the Rhubarb Topping
  • 3 cups Rhubarb, Chopped
  • 1 cup Sugar
  • ¼ cup Corn Starch
  • ¼ cup Water

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. In a mixing bowl, combine flour, oats, brown sugar, chopped pecans, and melted butter. Press this mixture into the bottom of the prepared pan.
  3. In another bowl, beat together the softened cream cheese, sugar, egg, and vanilla until smooth. Spread this mixture over the crust in the pan.
  4. In a saucepan, combine chopped rhubarb, sugar, corn starch, and water. Cook over medium heat until the rhubarb softens. Pour this mixture over the cheesecake layer in the pan.
  5. Bake in the preheated oven for 45 minutes, or until the center is set. Allow to cool before cutting into bars.

Notes

For a sweeter taste, adjust the sugar in the rhubarb topping. Serve chilled for best flavor.
