- Preheat your oven to 350°F (175°C). Grease a baking pan.
- In a mixing bowl, combine flour, oats, brown sugar, chopped pecans, and melted butter. Press this mixture into the bottom of the prepared pan.
- In another bowl, beat together the softened cream cheese, sugar, egg, and vanilla until smooth. Spread this mixture over the crust in the pan.
- In a saucepan, combine chopped rhubarb, sugar, corn starch, and water. Cook over medium heat until the rhubarb softens. Pour this mixture over the cheesecake layer in the pan.
- Bake in the preheated oven for 45 minutes, or until the center is set. Allow to cool before cutting into bars.
Notes
For a sweeter taste, adjust the sugar in the rhubarb topping. Serve chilled for best flavor.
