Ingredients
  

For the Bread
  • 1⅓ cups sugar divided
  • 2 teaspoons ground cinnamon
  • 2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • cup vegetable oil
Rhubarb
  • 1 cup large diced rhubarb

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a mixing bowl, combine the sugar, cinnamon, flour, baking powder, and salt. In a separate bowl, whisk together the egg, milk, and vegetable oil. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the rhubarb.
  3. Pour the batter into the prepared loaf pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

This bread is best served warm. You can also add nuts or other fruits for variation.
