Method
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a mixing bowl, combine the sugar, cinnamon, flour, baking powder, and salt. In a separate bowl, whisk together the egg, milk, and vegetable oil. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the rhubarb.
- Pour the batter into the prepared loaf pan and bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
This bread is best served warm. You can also add nuts or other fruits for variation.
