Ingredients
  

FOR THE BROWNIES
  • ¾ cup butter, melted
  • ½ cup Dutch-processed cocoa powder
  • 2 large eggs
  • 1 ½ cups granulated sugar
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ½ teaspoon salt
FOR THE PEPPERMINT FROSTING
  • ½ cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • ½ teaspoon peppermint extract
  • ½ teaspoon vanilla extract
  • 1 tablespoon whole milk
FOR THE CHOCOLATE GANACHE
  • 4 oz semisweet chocolate, chopped
  • 2 tablespoons unsalted butter, cut into cubes
For Decorating
  • crushed peppermint candies for decorating

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
  2. In a mixing bowl, combine melted butter, cocoa powder, eggs, sugar, peppermint extract, and vanilla extract. Stir until well mixed.
  3. Add flour and salt to the mixture and stir until just combined. Pour the batter into the prepared baking dish.
  4. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool.
  5. For the frosting, beat the unsalted butter until creamy. Gradually add powdered sugar, peppermint extract, vanilla extract, and milk. Mix until smooth.
  6. Spread the peppermint frosting over the cooled brownies.
  7. For the ganache, melt the semisweet chocolate and butter together in a heatproof bowl. Stir until smooth.
  8. Pour the ganache over the frosted brownies and spread evenly.
  9. Sprinkle crushed peppermint candies on top for decoration.

Notes

Store brownies in an airtight container. They can be made ahead of time and are great for holiday gatherings.
