Ingredients
  

For the Toast
  • 4 slices thick bread (like brioche or challah)
For the Spread
  • ¼ cup peanut butter
  • 1 large banana, thinly sliced
For the Batter
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • 1 tablespoon butter, for cooking
For Serving
  • Maple syrup
  • Powdered sugar

Method
 

  1. In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
  2. Dip each slice of bread in the egg mixture, coating both sides.
  3. Heat butter in a skillet over medium heat. Cook each slice of bread until golden brown on both sides.
  4. Spread peanut butter on each slice and top with banana slices.
  5. Serve with maple syrup and powdered sugar.

Notes

You can adjust the sweetness by adding more or less maple syrup.
