Ingredients
  

For the Scramble
  • ½ tablespoon olive oil
  • ¼ cup onions chopped
  • 1 ½ cups thin sliced mushrooms
  • ½ cup fresh baby spinach
  • 2 large eggs
  • 1 large egg white
  • 1 teaspoon water
  • kosher salt and black pepper to taste
Optional Cheese
  • 2 tablespoons cheese such as gruyere, cheddar or DF cheese (optional)

Method
 

  1. Heat olive oil in a skillet over medium heat. Add onions and cook until translucent.
  2. Add mushrooms and cook until tender. Stir in spinach and cook until wilted.
  3. In a bowl, whisk together eggs, egg white, water, salt, and pepper.
  4. Pour egg mixture into the skillet. Cook, stirring gently, until eggs are set. Stir in cheese if using.

Notes

You can use any cheese you prefer. Adjust the seasoning to your taste.
