Ingredients
  

For the Steak and Marinade
  • 1 lb sirloin steak about 1-inch thick
  • 3 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Bowl Base
  • 2 cups cooked grains brown rice, quinoa, or cauliflower rice
  • 1 cup roasted chickpeas optional for paleo or keto
For the Toppings
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ red onion red onion thinly sliced
  • ½ cup kalamata olives pitted
  • cup feta cheese crumbled, optional for dairy-free
  • ¼ cup fresh herbs parsley or dill, chopped
For the Tzatziki
  • 1 cup Greek yogurt plain, coconut yogurt for dairy-free
  • ½ cucumber cucumber grated and squeezed dry
  • 1 tablespoon lemon juice fresh
  • 1 clove garlic minced
  • 1 tablespoon fresh dill chopped
  • salt & pepper to taste
For the Lemon Vinaigrette
  • salt & pepper to taste
  • 3 tablespoon olive oil
  • 2 tablespoon lemon juice fresh
  • 1 teaspoon honey omit for Whole30
  • 1 clove garlic minced
  • ½ teaspoon dried oregano

Method
 

  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Add the sirloin steak and marinate for at least 15 minutes.
  2. Grill or pan-sear the marinated steak for about 5-7 minutes per side, or until cooked to your liking. Let it rest before slicing.
  3. For the tzatziki, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper in a bowl.
  4. In another bowl, combine olive oil, lemon juice, honey, minced garlic, salt, pepper, and oregano to make the vinaigrette.
  5. Assemble the bowl by placing cooked grains at the bottom, topped with sliced steak, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, and fresh herbs. Drizzle with tzatziki and vinaigrette before serving.

Notes

You can substitute cooked grains with cauliflower rice for a low-carb option. Adjust the toppings and sauces to your preference.
