- In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Add the sirloin steak and marinate for at least 15 minutes.
- Grill or pan-sear the marinated steak for about 5-7 minutes per side, or until cooked to your liking. Let it rest before slicing.
- For the tzatziki, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper in a bowl.
- In another bowl, combine olive oil, lemon juice, honey, minced garlic, salt, pepper, and oregano to make the vinaigrette.
- Assemble the bowl by placing cooked grains at the bottom, topped with sliced steak, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, and fresh herbs. Drizzle with tzatziki and vinaigrette before serving.
Notes
You can substitute cooked grains with cauliflower rice for a low-carb option. Adjust the toppings and sauces to your preference.
