Method
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
- In a separate bowl, whisk together the olive oil, lemon juice or vinegar, salt, black pepper, oregano, parsley, and garlic if using.
- Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate before serving.
Notes
This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
