Ingredients
  

Beans
  • 1 can (15 oz) chickpeas drained and rinsed
  • 1 can (15 oz) red kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ½ red onion thinly sliced
Olives and Cheese
  • ½ cup kalamata olives halved
  • ½ cup crumbled feta cheese
Dressing
  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 clove garlic minced
  • ½ teaspoon dried oregano
  • Salt and ground black pepper to taste

Method
 

  1. In a large bowl, combine the chickpeas, red kidney beans, black beans, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Pour the dressing over the salad and toss to combine.

Notes

This salad can be served immediately or chilled for a more refreshing taste. Feel free to add other vegetables like bell peppers or corn.
