Ingredients
  

For the Salad
  • 2 cans chickpeas, drained and rinsed approximately 850g / 3 cups
  • ½ cup red onion, finely chopped approximately 75g
  • 1 cup cherry tomatoes, halved approximately 150g
  • 1 cucumber, peeled, seeded, and diced approximately 200g
  • ½ cup Kalamata olives, pitted and halved approximately 80g
  • 4 ounces feta cheese, crumbled approximately 115g
  • ¼ cup fresh parsley, chopped approximately 30g
  • ¼ cup fresh mint, chopped approximately 30g
For the Dressing
  • ¼ cup olive oil approximately 60ml
  • 3 tablespoons lemon juice approximately 45ml
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine chickpeas, red onion, cherry tomatoes, cucumber, Kalamata olives, feta cheese, parsley, and mint.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.

Notes

This salad is best served fresh. You can customize it by adding other ingredients such as bell peppers or avocado.
