  • 2 medium zucchini, sliced into half moons
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
For Garnish
  • cup crumbled feta cheese
  • Fresh parsley or basil, chopped for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine zucchini, chicken, cherry tomatoes, red onion, garlic, olive oil, oregano, thyme, paprika, salt, and pepper. Mix well.
  3. Bake for 30 minutes or until chicken is cooked through and vegetables are tender.
  4. Remove from oven and sprinkle with feta cheese and fresh herbs before serving.

Notes

This dish can be served with a side of rice or quinoa for a complete meal.
