Ingredients
  

For the Stir-Fry
  • 1 lb chicken breast, cubed
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
For Seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Feta cheese for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add cubed chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add cherry tomatoes, Kalamata olives, oregano, thyme, salt, and pepper to the skillet. Stir and cook for an additional 3-5 minutes.
  4. Serve hot, garnished with feta cheese.

Notes

You can add other vegetables like bell peppers or zucchini for extra flavor.
