Ingredients
  

Roasted Potatoes
  • 2 pounds russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Taco Meat
  • 1 pound ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • ½ cup tomato sauce
  • ¼ cup water
Bowl Toppings
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • ¼ cup sliced green onions
Optional Extras
  • jalapeño slices
  • corn kernels
  • black beans
  • hot sauce
  • lime wedges

Method
 

  1. Preheat your oven to 400°F (200°C). Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet and roast for 30-35 minutes until golden brown.
  2. In a skillet, heat olive oil over medium heat. Add ground beef or turkey and cook until browned. Stir in taco seasoning, tomato sauce, and water. Simmer for 5-10 minutes.
  3. To assemble, place roasted potatoes in a bowl. Top with taco meat, cheese, lettuce, tomatoes, avocado, sour cream, cilantro, and green onions. Add any optional extras as desired.
