- Preheat your oven to 400°F (200°C). Toss the diced potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet and roast for 30-35 minutes until golden brown.
- In a skillet, heat olive oil over medium heat. Add ground beef or turkey and cook until browned. Stir in taco seasoning, tomato sauce, and water. Simmer for 5-10 minutes.
- To assemble, place roasted potatoes in a bowl. Top with taco meat, cheese, lettuce, tomatoes, avocado, sour cream, cilantro, and green onions. Add any optional extras as desired.
