Ingredients
  

For the Tostadas
  • 4 pieces tostada shells
For the Toppings
  • 4 large eggs
  • 2 tablespoons butter
  • 1 cup black beans drained
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 piece avocado sliced
  • ½ cup salsa
  • 2 tablespoons fresh cilantro chopped
  • 2 pieces green onions chopped
  • to taste salt
  • to taste pepper
  • to taste hot sauce (optional)

Method
 

  1. In a skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set.
  2. While the eggs cook, prepare the tostada shells by warming them in the oven or a separate skillet.
  3. Once the eggs are cooked, assemble the tostadas by layering each shell with black beans, eggs, cheeses, avocado, salsa, cilantro, green onions, salt, and pepper. Add hot sauce if desired.

Notes

You can customize the toppings based on your preference. Try adding different vegetables or meats for variety.
