Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • to taste salt and black pepper
  • Juice of 1 lime
For the Guacamole
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1 tablespoon chopped cilantro
  • to taste salt
For the Toppings
  • 1 cup shredded green cabbage
  • ½ cup thinly sliced cucumber
  • to taste fresh cilantro (optional)
  • to taste lime wedges
For Serving
  • 6 small flour or corn tortillas

Method
 

  1. Marinate the chicken breasts with olive oil, paprika, cumin, chili powder, garlic powder, salt, black pepper, and lime juice. Let it rest for at least 15 minutes.
  2. Grill the marinated chicken on medium heat for about 6-7 minutes per side, or until fully cooked. Remove from grill and let rest.
  3. While the chicken is resting, prepare the guacamole by mashing the avocados and mixing in lime juice, chopped cilantro, and salt.
  4. Slice the grilled chicken and assemble the tacos by placing chicken, guacamole, cabbage, cucumber, and cilantro on tortillas. Serve with lime wedges.

Notes

You can adjust the toppings to your liking. Try adding your favorite salsa for extra flavor.
