Ingredients
  

For the Cake
  • 2 cups almond flour
  • 1 cup granulated sugar
  • 4 large eggs
  • ½ cup melted butter or olive oil
  • Juice of 2 lemons lemon juice
  • Zest of 2 lemons lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chopped pistachios plus extra for sprinkling
For the Lemon Glaze
  • ½ cup lemon juice
  • cup sugar
  • More for garnish chopped pistachios

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and line a baking pan.
  2. In a mixing bowl, combine almond flour, sugar, eggs, melted butter or oil, lemon juice, lemon zest, vanilla extract, baking powder, and salt. Mix until well combined.
  3. Fold in the chopped pistachios.
  4. Pour the batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  5. While the cake is baking, prepare the lemon glaze by mixing lemon juice and sugar in a small saucepan. Heat until the sugar dissolves.
  6. Once the cake is done, let it cool slightly, then drizzle with the lemon glaze and sprinkle with additional pistachios.

Notes

You can serve this cake warm or at room temperature. It keeps well in the fridge for several days.
