  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • ½ teaspoon salt
For the Secondary Component
  • 1 large ripe mango, diced
  • 1 large avocado, sliced
  • ½ large red onion, finely diced
  • 1 large red bell pepper, diced
  • ¼ cup fresh cilantro, chopped
For the Sauce / Layer / Topping
  • 3 tablespoon honey
  • 2 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes
For Garnish (optional)
  • 1 large lime, cut into wedges
  • 1 teaspoon toasted sesame seeds

Equipment

Method

  1. In a pot, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer until quinoa is cooked, about 15 minutes.
  2. In a skillet, heat olive oil over medium heat. Add cubed chicken and salt, cooking until chicken is browned and cooked through, about 10 minutes.
  3. In a bowl, mix honey, lime juice, soy sauce, garlic, and red pepper flakes to create the sauce.
  4. Once the quinoa and chicken are ready, combine them in a bowl. Top with mango, avocado, red onion, bell pepper, and cilantro. Drizzle with sauce.
  5. Garnish with lime wedges and sesame seeds if desired.

Notes

You can adjust the spice level by adding more or fewer red pepper flakes.
