Ingredients
  

For the chicken
  • 8 pieces chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
For the honey glaze
  • cup honey
  • 2 tablespoons barbecue sauce
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon Dijon mustard
For the mashed potatoes
  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons butter
  • cup milk
  • to taste salt and pepper
For the vegetables
  • 3 cups baby carrots
  • 1 ½ cups corn kernels
  • 1 tablespoon butter
  • 1 teaspoon chopped parsley
  • to taste salt and pepper
For garnish
  • 1 tablespoon chopped fresh parsley

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Coat the chicken drumsticks with this mixture.
  3. Place the chicken drumsticks in a baking dish and bake for 35 minutes.
  4. In another bowl, combine honey, barbecue sauce, soy sauce, minced garlic, butter, and Dijon mustard. Mix well.
  5. After 35 minutes, remove the chicken from the oven and brush the honey glaze on top. Return to the oven and bake for another 10 minutes.
  6. While the chicken bakes, prepare the mashed potatoes. Boil the potatoes until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper.
  7. In a pan, sauté baby carrots and corn kernels in butter. Season with salt and pepper.
  8. Serve the chicken drumsticks with mashed potatoes and vegetables. Garnish with fresh parsley.

Notes

You can adjust the sweetness of the glaze by adding more or less honey. Feel free to substitute other vegetables as desired.
