- Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, smoked paprika, and black pepper. Spread on a baking sheet and roast for about 25 minutes or until tender.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Then add ground beef, chili powder, smoked paprika, cumin, salt, and black pepper. Cook until the beef is browned and cooked through.
- Stir in hot honey, soy sauce, and apple cider vinegar. Cook for an additional 2-3 minutes.
- To serve, layer sweet potatoes in bowls, top with the beef mixture, cottage cheese, sliced avocado, and garnish with cilantro or green onion if desired.
Notes
Feel free to adjust the spice level by adding more or less hot honey and crushed red pepper flakes.
