Ingredients
  

For the Sweet Potatoes
  • 2 medium sweet potatoes, peeled and cubed (about 4 cups)
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
For the Beef Mixture
  • 1 lb lean ground beef (90/10 or 93/7)
  • 1 tablespoon olive oil (only if needed)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoon hot honey (plus more for drizzle)
  • 1 tablespoon soy sauce (or coconut aminos)
  • 1 tablespoon apple cider vinegar (or lime juice)
  • ¼ teaspoon crushed red pepper flakes (optional, for extra heat)
For Serving
  • 1 cup cottage cheese (about ½ cup per bowl)
  • 1 whole avocado, sliced
  • to taste chopped cilantro or green onion (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, smoked paprika, and black pepper. Spread on a baking sheet and roast for about 25 minutes or until tender.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Then add ground beef, chili powder, smoked paprika, cumin, salt, and black pepper. Cook until the beef is browned and cooked through.
  3. Stir in hot honey, soy sauce, and apple cider vinegar. Cook for an additional 2-3 minutes.
  4. To serve, layer sweet potatoes in bowls, top with the beef mixture, cottage cheese, sliced avocado, and garnish with cilantro or green onion if desired.

Notes

Feel free to adjust the spice level by adding more or less hot honey and crushed red pepper flakes.
