Ingredients
  

For the Herbed Ricotta
  • cup ricotta cheese
  • 2 tablespoon mixed herbs, finely chopped (basil, tarragon, chives)
  • ½ lemon zest finely grated
  • 2 teaspoon lemon juice
For the Toast
  • 2 large slices country bread, toasted
  • 2 large slices tomato
  • for serving olive oil
  • for serving fleur de sel

Method
 

  1. In a mixing bowl, combine ricotta cheese, mixed herbs, lemon zest, and lemon juice. Mix until well combined.
  2. Spread the herbed ricotta mixture on toasted bread slices. Top with fresh tomato slices. Drizzle with olive oil and sprinkle fleur de sel before serving.
