Ingredients
  

For the Chimichurri Sauce
  • 1 cup fresh flat-leaf parsley tightly packed
  • ¼ cup fresh cilantro optional but recommended
  • 4 cloves garlic roughly chopped
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 3 tablespoons red wine vinegar
  • ½ cup extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Ground Beef
  • 1.5 lbs lean ground beef 85/15 or 90/10
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
For the Bowls
  • 2 cups dry white rice cooked according to package instructions
  • 2 avocados sliced
  • 1 cup cherry tomatoes halved
  • ½ cup pickled red onions store-bought or homemade
  • Fresh parsley for garnish
  • Lime wedges for serving

Method
 

  1. In a mixing bowl, combine parsley, cilantro, garlic, red pepper flakes, oregano, red wine vinegar, olive oil, salt, and black pepper to make the chimichurri sauce. Mix well.
  2. In a skillet, heat olive oil over medium heat. Add ground beef, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Cook until the beef is browned.
  3. Prepare rice according to package instructions.
  4. To assemble the bowls, layer rice, ground beef, sliced avocados, cherry tomatoes, and pickled red onions. Drizzle with chimichurri sauce and garnish with fresh parsley. Serve with lime wedges.

Notes

You can adjust the seasoning in the chimichurri sauce according to your taste.
