Method
- Preheat your grill or skillet over medium heat.
- In a bowl, mix the zucchini, red bell pepper, red onion, olive oil, sun-dried tomatoes, Kalamata olives, oregano, salt, and pepper.
- Place a tortilla on the grill or skillet. Layer with cheese and vegetable mixture, then top with another tortilla.
- Cook for 3-4 minutes on each side until the tortillas are golden and the cheese melts.
- Remove from heat, cut into wedges, and serve warm with optional greens.
Notes
Feel free to add any other vegetables you like. You can also serve with salsa or sour cream.
