Ingredients
  

For the Grilled Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano or Italian seasoning
For the Mashed Potatoes
  • 2 lbs potatoes, peeled and cubed 900g
  • 4 tablespoons butter
  • ½ cup milk or heavy cream
For the Fresh Tomato Salad
  • 2 cups chopped fresh tomatoes
  • ½ piece red onion, finely diced
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice or vinegar

Method
 

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic, paprika, oregano, salt, and pepper. Coat the chicken breasts with this mixture.
  3. Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  4. Meanwhile, boil the potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper.
  5. In a bowl, combine chopped tomatoes, red onion, parsley, olive oil, lemon juice, salt, and pepper to make the salad.
  6. Serve the grilled chicken with mashed potatoes and fresh tomato salad.

Notes

You can add other vegetables to the salad for more flavor.
