Method
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, garlic, paprika, oregano, salt, and pepper. Coat the chicken breasts with this mixture.
- Grill the chicken for about 6-7 minutes on each side, or until cooked through.
- Meanwhile, boil the potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper.
- In a bowl, combine chopped tomatoes, red onion, parsley, olive oil, lemon juice, salt, and pepper to make the salad.
- Serve the grilled chicken with mashed potatoes and fresh tomato salad.
Notes
You can add other vegetables to the salad for more flavor.
